The Paris métro starts at 05:30 on every line, and a few cafés are open before the first train.1 Le Canon de la Nation on Place de la Nation opens at 05:00 every day, Le Rapide de l'Est in the 10e at 05:00 from Monday to Saturday, Donnant on Rue de Maubeuge at 05:30 and Les Deux Savoie on Boulevard Diderot at 05:45.
Most of the rest open on the hour at 06:00, and they gather around the big stations. Gare de Lyon & Bercy has by far the most, well ahead of the Canal Saint-Martin, home to the Gare du Nord and Gare de l'Est. Gare de Lyon alone counted 113,224,230 travelers in 2024.2
Local tip: Coming off a night train or catching an early TGV, walk out onto Boulevard Diderot: Les Deux Savoie opens at 05:45 every day, and Terminus a few doors along at 06:00 except on Sundays.

Les Halles was the city's wholesale food market, the 'belly of Paris' of Émile Zola's 1873 novel Le Ventre de Paris. Its fruit, vegetable and flower trade left in 1969, and the market was gone by 1973, relocated to Rungis when the old halls were demolished.4
The streets around it still start early. Le Compas at 62 Rue Montorgueil opens at 06:00 every day, and so does Café du Cadran on Rue Daunou near Opéra. Across the river, Le Lutèce at 8 Boulevard Saint-Michel and Bar de la Croix Rouge on Place Michel Debré open at 06:00 from Monday to Saturday, and Le Bac Saint-Michel at No. 97 on weekdays.
