Seattle’s coffee trade began at Pike Place Market, where Edward and William Manning, coffee merchants from Boston, opened Manning’s Coffee in 1908 and charged 2 cents a cup; by the 1930s the business had more than 60 locations.1 The oldest coffeehouse still pouring is Café Allegro, opened in 1975 in an alley off University Way, across from the University of Washington.12 Its founder, Dave Olsen, co-developed an espresso roast with Starbucks and became the company’s head buyer and roaster in August 1987.2

Street espresso followed. On December 1, 1980, Chuck Beek parked an espresso cart at Westlake Mall, under the monorail, to test whether people would buy espresso outside a coffeehouse; Monorail Espresso still serves from a walk-up window at 510 Pike Street.3 The machines came with the drinkers: Kent Bakke became the first US distributor of La Marzocco in 1978, the Italian maker ran a factory in Ballard from 1994 to 2004, and the Slayer, which lets a barista change pressure during a shot, was developed in South Seattle in 2007.1

Newer cafés brew to other traditions. Ethiopian cafés serve jebena buna, coffee brewed in a jebena pot and poured at the table.4 Efrem Fesaha started Boon Boona after visiting family in Asmara, Eritrea, roasts beans from East Africa, and in 2026 opened a café on Overlook Walk, the elevated park between Pike Place Market and the waterfront.56 In Little Saigon, Hello Em opened in January 2021 as the city’s first Vietnamese coffee roastery, importing beans from Kon Tum and Buôn Ma Thuột.7

Seattle by area

Seattle has had no official neighborhood boundaries since 1910, so names overlap and shift.17 The Lake Washington Ship Canal divides the city: Fremont, Ballard and the University District lie north of it, while Capitol Hill and Queen Anne rise on either side of downtown.

How coffee is ordered in Seattle

You order and pay at the counter. Menus split brewed coffee from espresso drinks: at Freya Café in the National Nordic Museum the list runs from drip coffee and americanos to lattes, cappuccinos and a cardamom latte.8 Cash is not always taken; both Espresso Vivace bars, the Broadway East flagship and Alley 24 in South Lake Union, are card-only.910

Ethiopian coffee comes in three small cups without handles, the avole, the tona and the bereka, all poured from one batch of grounds; Café Avole, which opened in Brighton and is named after the first cup, kept about 20 jebenas there in 2016 and brewed fresh pots for the morning rush.4 Vietnamese cafés drip cà phê (coffee) through a phin, a small metal filter, often over condensed milk, and add cà phê trứng (egg coffee) and cà phê cốt dừa (coconut coffee).711

A tip is added on the card reader and is up to you. Seattle’s minimum wage is US$21.30 an hour in 2026, and from January 1, 2025, small employers lost the right to count tips toward minimum pay.12 Menu prices do not include sales tax, which is added at the register.

Laptop habits vary by café. In 2005 the manager of Victrola on 15th Avenue East told NPR that the café had switched off its Wi-Fi at weekends, because screens had stopped strangers from sharing tables and talking.13 For a guaranteed connection, the Seattle Public Library offers free Wi-Fi on its spl-public network at every branch during opening hours.14

For a connection you can count on, the Seattle Public Library offers free Wi-Fi on its spl-public network at every branch during opening hours.
