Sapporo's coffee runs dark. Self-roasting kissaten (喫茶店, coffee houses) began opening here in the 1970s, and what set them apart was fukairi (深煎り, a deep roast); shops that learned from them multiplied, and an unusual number of those early rooms are still in business.1 The city's tourism site adds Hokkaido's cool, dry air, which suits storing and roasting beans, and Sapporo's soft water, which makes for a gentle cup.1

Much of the city's coffee is brewed at home. In the national household survey's 2022–2024 averages, a Sapporo household spent ¥8,710 a year on coffee, fourth among 52 cities, but ranked only 44th for money spent in coffee shops, at ¥6,163.2 In 2020 Sapporo ranked first for household coffee spending, at ¥8,691 against a national average of ¥6,988.1

Two names show the range. Morihico (森彦) opened in June 1996 in an old wooden house in Maruyama, roasts its beans dark, and by 2026 ran 13 shops in Hokkaido and one abroad.3 Marumi Coffee opened in 2006 as a specialty shop;4 its owner, Gotō Eijirō, placed third at the 2009 World Cup Tasters Championship and won Japan's coffee roasting championship in 2013.1

Sapporo by area

Central Sapporo is a grid. Addresses count rows north (kita, 北) or south (minami, 南) of Odori Park in jō (条), and blocks east (higashi, 東) or west (nishi, 西) of the Sōsei River in chōme (丁目), so 南1条西26丁目 names the block one row south of Odori and 26 blocks west of the river, not a street corner.1512 The Sapporo TV Tower stands near the point where the two base lines cross.15

How coffee works in Sapporo

Order the burendo (ブレンド, house blend) and expect it strong and often poured through a flannel filter: MAPPLE's guide to the city's self-roasters describes many Sapporo shops brewing a dark roast by nel drip, a style it says suits the local water and climate.5 In September 2026 a cup of coffee at a Sapporo kissaten averaged ¥545 in the national retail price survey, against ¥640 in Tokyo's 23 wards and a 79-city average of ¥514.6

Ask for milk and it will be local. In September 2025 Hokkaido produced 346,360 of Japan's 580,397 tonnes of raw milk,7 and each Marumi Coffee café uses a different Hokkaido milk in its café latte, so the same order tastes different from shop to shop.4 After a night out, the local habit is shime pafe (締めパフェ, a parfait to close the evening), a name coined in 2015 for a custom that is older.8

Don't tip: Japan's national tourism organization says tipping is not customary in cafés, bars or restaurants.9 Check the door before you sit. Hokkaido's rules ask cafés that ban smoking indoors to say so at the main entrance, while a few small rooms licensed before April 2020 may still let guests smoke.10

Winter shapes the walk between cafés. Sapporo averages 4.79 m of snow a year,11 and a straight run of underground passages, 1.9 km long, links Sapporo Station with Odori and Susukino, so much of the center can be crossed without going outside.12

FAQ

Cafés in Sapporo: common questions

How much does a coffee cost in Sapporo?

A cup of coffee at a Sapporo kissaten averaged ¥545 in September 2026 in Japan's retail price survey, against ¥640 in Tokyo's 23 wards. Morihico's house blend at its Maruyama main store cost ¥913 in 2024, Kikuchi Coffee charged ¥360 for a blend in 2022, and a regular hot coffee from a Seven-Eleven machine has cost ¥140 since July 2025.

Which neighborhood of Sapporo has the most cafés?

Odori & Tanukikoji and Maruyama have the most cafés, followed by Sōsei East & Nijō Market. Odori's cafés gather at the TV Tower end and toward Tanukikoji; Maruyama's fill the residential blocks between Nishi 20- and Nishi 28-chōme.

Why is Sapporo known for deep-roast coffee?

Self-roasting kissaten opened in Sapporo from the 1970s, and their mark was fukairi, a deep roast; later shops learned from them, and many of the early rooms are still open. The city's tourism site also credits Hokkaido's cool, dry climate, which suits storing and roasting beans, and Sapporo's soft water.

How do Sapporo addresses like Minami 1-jō Nishi 26-chōme work?

They name a block in the city grid. Jō counts rows north or south of Odori Park, and chōme counts blocks east or west of the Sōsei River, so Minami 1-jō Nishi 26-chōme is one row south of Odori and 26 blocks west of the river. The Sapporo TV Tower stands near where the two base lines cross.

What is a shime parfait in Sapporo?

A shime parfait is a parfait eaten to close an evening out, often after drinking. The name was coined in 2015, though the late-night custom is older. As of 2026, one cost about ¥700 at a takeout chain and about ¥2,000 at a specialty parfait shop.

Do you tip in Sapporo cafés?

No. Japan's national tourism organization says tipping is not customary in cafés, bars or restaurants, and Sapporo's kissaten and coffee bars follow the same rule. Pay the amount on the bill or menu.
