Breakfast in Manila starts at the bakery. The dough for pandesal, made from flour, yeast, sugar, oil and salt, is rolled into logs, coated in fine breadcrumbs, cut, left to rise and baked.1 The roll descends from pan de suelo, a Spanish-Filipino bread baked on the floor of a wood-fired oven, and grew popular in the early 1900s, when cheaper American wheat arrived under U.S. rule.1
Most of the cafés open by 06:00 never close at all: more than half are 24-hour places, the largest group of them in Ermita & Malate. Among the rest, Bean & Batter, at 318 Shaw Boulevard in Mandaluyong, is first, at 05:00 Tuesday to Sunday.
Local tip: On a Sunday, reach the Legazpi market in Legazpi Active Park early.3 For coffee first, H Proper at Ayala Triangle Gardens opens at 06:30 every day.

The Salcedo Community Market opens at 07:00 every Saturday in Jaime C. Velasquez Park and packs up at 14:00; it was planned in 2004 and opened the following year.2 On Sundays the Legazpi market fills Legazpi Active Park from early morning; the 0.75-hectare park is bounded on the south by Gamboa Street.3
The first merienda of the day falls between breakfast and lunch and can stand in for brunch or elevenses.4 In December, bibingka is eaten after the nine days of Simbang Gabi masses, often with puto bumbong, and is topped with salted egg, grated coconut or kesong puti, a carabao cheese.5
Two cafés put the rice cake in their name: Antonio's Coffee and Bibingka in Ortigas, and Hello, Coffee & Bibingka on P. Guevarra Street in San Juan, which has Wi-Fi.
Tsokolate, the hot chocolate whipped from tableya, was a breakfast and merienda drink in the Philippines before coffee was.6 Hitaka Higop Tableya Kape, on Luzon Avenue at Batanes Street, takes its name from the cacao tablets.
Plan market walks for the dry season, December to April; the wet season covers most of the rest of the year, with typhoons usually between June and September.7
