Almaty began as Fort Zailiyskoe, laid out by Russia in February 1854 and renamed Vernoye before the year was out; it became Alma-Ata in 1921 and Almaty in 1993.1 About 2.35 million people lived in its eight districts at the start of 2026, and the café trade is growing with them: coffee sales in Almaty rose 16% in 2025, while Astana's grew by a third.12 Coffee Boom, a chain running since 2010, roasts its own beans and has more than 130 coffee houses in Kazakhstan, Russia and Uzbekistan.3

Street names change faster than habits. Furmanov Street became Nazarbayev Avenue by a city council vote on 30 November 2017, and Dostyk Avenue was Lenin Avenue until 1995.45 Many residents still give directions by Soviet names such as Furmanova, Kalinina and Tashkentskaya, and say everyone understands them.6 Café addresses are often written in Kazakh: көшесі (köshesi) means street and даңғылы (dañğyly) avenue, so Абылай хан даңғылы is Abylai Khan Avenue, called Kommunistichesky Avenue from 1961 until the early 1990s.7

The city climbs toward the mountains, and the seasons set the café rhythm. July averages 23.8 °C and January −4.7 °C, and April, with 112.4 mm, is the wettest month.1 In summer many places move tables outside onto летники (letniki, summer terraces): about 30% of Almaty's eateries use them, and in May 2026 the akimat (city hall) began rewriting the permit rules.8

How coffee works in Almaty

Cappuccino is the best-selling café drink in Kazakhstan, followed by latte and americano. In 2025 the average cup cost 1,310 ₸, 8% more than a year earlier, and sales of filter coffee grew by 65%.2 Mornings carry the trade: a quarter of a café's daily takings come between 08:00 and 10:00, sales peak at 09:00, and half the day's money is made before 13:00.2

Tea has its own houses. A чайхана (chaikhana, tea house) in Central Asia serves full meals as well as tea, typically plov, samsa, shurpa, manty and lagman. In Kazakhstan they are less common than in Uzbekistan and are found mostly in the south, near Uzbek communities; they serve no alcohol, though some pour kumys, fermented mare's milk.9

Almaty also has антикафе (anticafés), where you pay for time rather than for what you eat or drink. The format began with Tsiferblat in Moscow in autumn 2011, at one ruble a minute, and the fee usually covers tea, coffee, snacks and Wi-Fi.10 TimeKafe on Altynsarin Avenue charges 1,100 ₸ for the first hour and 19 ₸ for each further minute, as of 2026.11

Kaspi QR, the scan-to-pay code of Kazakhstan's biggest payment app, has the widest merchant coverage in the country, from cafés to village shops, and since August 2025 visitors can pay through it with 12 foreign wallet and bank apps via Alipay+.12 At sit-down cafés and restaurants a 10% service charge is usually added to the bill, and a further tip of 5–15% is common for good service.13
