Rustaveli Avenue, the city's main street, was laid out in the 1840s on the orders of the viceroy Mikhail Vorontsov and carried the name Golovin Prospekt until 1918.1 In 1906 Mitrofan Lagidze opened a Lagidze Waters shop on it, selling the soft drinks he had first mixed in Kutaisi in 1887 from natural syrups and soda water instead of imported essences.23 Tarkhuna, the green tarragon soda, is credited to him too, and the technology and culture of Lagidze waters joined Georgia's intangible heritage list in 2014.43
The newer cafés often move into old industrial buildings. Fabrika, a Soviet women's-wear factory on Egnate Ninoshvili Street that stood abandoned after the 1990s, reopened in July 2016 as a hostel and creative courtyard.5 Shavi Coffee Roasters now pours in Chugureti, Vera and Sololaki, and Coffee LAB, one of the first cafés in the city to roast its own beans, supplies many other cafés and restaurants.6 Starbucks came late: Georgia's first branch opened in July 2026 in Axis Towers in Vake.7
The weather sets the rhythm. July averages 25.4 °C, afternoon highs reach 32 °C or more on about 22 days a year, and May is the wettest month.8 In summer the courtyard and terrace tables fill after dark, when cafés on Atoneli Street, Aghmashenebeli Avenue and around Freedom Square are still serving.
Old Tbilisi spreads over both banks of the Mtkvari below Narikala, and Sololaki climbs the slope between Mtatsminda and the Sololaki ridge just west of it.1617 Vera and Vake lie in the southwest on the right bank, Saburtalo to their north, and Chugureti across the river along Aghmashenebeli Avenue.181920

Espresso menus run from americano to flat white and V60, and the drink visitors may not know is the Raf: a shot of espresso with cream and vanilla sugar, foamed together with the steam wand, first made at the Coffee Bean café in Moscow in 1996–97.9 Tbilisi cafés flavor it. Lui in Vake lists lavender and orange Rafs at ₾13.40, and Puri Guliani makes versions with halva and with tarragon.1011
Coffee often comes with khachapuri, the cheese-filled bread that counts as Georgia's national dish; it was added to the country's intangible heritage list on 22 January 2019, and the International School of Economics at Tbilisi State University developed a khachapuri index to compare inflation between Georgian cities.12 A round Imeruli khachapuri cost ₾5–8 in May 2026, and a bakery snack of khachapuri and a drink ₾3–8.13
Tipping in coffee shops and bakeries is optional: round up, or leave change in the jar by the till. In sit-down restaurants about 10 percent is usual, but check the bill first, because more places add a service charge (მომსახურება, momsakhureba) of 10–18 percent.14 Carry some cash as well; Corner House Coffee on Aghmashenebeli Avenue takes no cards at all.6
Laptop rules differ from café to café. Hurma, Pulp and OKRO set aside laptop tables, Santino allows no laptops, and Prospero's Books on Rustaveli Avenue limits its Wi-Fi to three hours.6 Smoking in cafés, bars, restaurants and hotels has been banned since 1 May 2018, but open verandas and terraces were left out of the ban.15

In mid-2026 a cappuccino at cafés in central Tbilisi cost ₾9–15, from ₾7 at the Coffeester takeaway counter to ₾15 at Daily Grind. Lui in Vake charged ₾6.50 for an espresso, ₾8.90 for a small cappuccino or flat white and ₾13.40 for a flavored Raf. A round Imeruli khachapuri cost ₾5–8.
Vake and Rustaveli & Mtatsminda have the most cafés, followed by Old Tbilisi & Sololaki. Vake has the widest choice, from Chavchavadze Avenue to the Abashidze and Paliashvili grid; Rustaveli & Mtatsminda comes a close second, ahead of Old Tbilisi & Sololaki and Saburtalo.
A Raf is espresso with cream and vanilla sugar, foamed together with the steam wand rather than adding foamed milk to the coffee. It was first made at the Coffee Bean café in Moscow in 1996–97. Tbilisi cafés often flavor it: Lui in Vake sells lavender and orange Rafs, and Puri Guliani makes halva and tarragon versions.
Tipping in Tbilisi coffee shops and bakeries is optional; people round up or leave change in the jar by the till. In sit-down restaurants about 10 percent is usual, unless the bill already carries a service charge, which is often 10–18 percent. Some cafés, such as Corner House Coffee, take cash only.
Smoking inside cafés, bars, restaurants and hotels in Tbilisi has been banned since 1 May 2018, under amendments to Georgia's tobacco law. Open verandas and terraces of bars and restaurants were left out of the ban, so smokers sit outside.
