Japanese baking has a Tokyo birthplace. Kimuraya began in 1869 as Bunei-dō in Shiba, moved to the newly built Ginza brick district in 1874, and developed its sake-yeast anpan (あんパン, a soft roll filled with sweet bean paste) there.1 On 4 April 1875 a cherry-blossom anpan was presented to the Emperor Meiji at the Mito domain's residence in Mukōjima, by the Sumida River, and the date is now Anpan Day.1

Bread costs more than it did. In Tokyo's 23 wards, shokupan (食パン, the square white sandwich loaf) rose from 2022 and peaked at ¥544 a kilogram in March 2025.2 Shinjuku has the most bakery cafés, followed by Harajuku & Omotesandō and Kanda & Jimbōchō; several are cake-and-coffee shops rather than bread bakeries.

Local tip: Kimuraya's Ginza flagship hangs a 木村家 sign whose original Yamaoka Tesshū wrote in 1875; the one on show is a replacement, since the earthquake of 1923 destroyed the first.1

Premium loaves, then rice prices

Bakeries have had an uneven run. Tokyo Shoko Research counted 34 bakery bankruptcies nationwide in 2019, as a boom in premium shokupan took off, and 31 in 2024, the second-highest in 20 years, as flour and utility bills rose.3

Then rice got expensive. From January to April 2025 only seven bakeries failed, about half the figure a year earlier, and TSR put a six-slice loaf at about ¥210, or ¥35 a slice, against roughly ¥50 for a 100 g bowl of rice.3 It also noted that rising inbound tourism had helped bakeries.3

French bread in Shibuya

Viron's Shibuya shop opened in 2003 and bakes its baguette with Retrodor, a flour from the French miller Viron; its jambon fromage, a ham-and-cheese baguette sandwich, has been on sale since the first year.4 The shop is at 33-8 Udagawachō and opens daily 08:00–22:15, unusually late for a bakery.

In Jingūmae, パンとエスプレッソと (Pan to Espresso to, "bread and espresso and") at 4-9 Jingūmae 3-chōme pairs a bakery with an espresso bar, open daily 08:00–20:00.

Kissaten sweets in Jimbōchō

Some of Tokyo's bakery cafés are old coffee houses known for cake and toast. 神田伯剌西爾 (Kanda Burajiru, "Kanda Brazil") opened in 1972 in a basement on Jimbōchō's main street, and its Kanda blend cost ¥650 as of 2026.5 It opens 11:00–21:00 from Monday to Saturday and closes at 19:00 on Sundays.

Ladrio (ラドリオ) nearby, from 1949, runs until 22:30 on weekdays, and プシケ (Psyche) is in the same district.
