Specialty coffee is recent in Mérida. Ralf Hollmann of Yucatán Today traces it through the Italian Coffee Company and Starbucks, which opened in 2007, to today, when independent cafés and roasters abound.1 The beans come from Mexico's growing states: Manifesto sources from Chiapas, Veracruz, Oaxaca, Guerrero and Puebla.2

It costs a little more here than in Oaxaca. In 2026 an americano at a Mérida specialty café ran MX$50–65 and a latte MX$65–85, against MX$40–55 and MX$55–75 in Oaxaca and Xalapa, and below the MX$60–75 americano of Mexico City's Roma, Condesa and Polanco.3

Local tip: Buying beans to take home? Coffee Brew Lab SCR says its roast dates are recent and sells 250 g bags; in 2026 a 250 g bag of Mexican specialty coffee cost MX$180–280.83
