Ljubljana's late cafés are café-bars: the espresso machine stays on while the evening switches to beer and wine. The law helps them after dark. Shops may not sell alcohol between 21:00 and 07:00, but cafés and bars may serve it until the end of their opening hours.1
The Center has the most late openers, along Trubarjeva cesta and the embankments; in Vič, most of them line Tržaška cesta. Kavarna Mačkon and Pritličje stay open until 03:00.
Local tip: Buy any bottle before 21:00: shops may not sell alcohol between 21:00 and 07:00, though cafés and bars can serve until closing.1

Mornings are the exception: cafés may not sell spirits from opening time until 10:00, and the ban covers a spirit added to coffee or another drink.1 After 21:00, a bottle of wine from a shop is off the table until 07:00, so a café-bar is where the evening drink happens.1
