Thai baking has a Portuguese thread. Egg-yolk sweets such as foi thong (ฝอยทอง), thong yip and thong yot are credited to Maria Guyomar de Pinha, a cook of Japanese, Portuguese and Bengali descent in the Ayutthaya palace of the late 17th century, though historians disagree on how much of the credit is hers.12
Chiang Mai's bakery cafés are a newer layer: cakes, bread and pastries alongside the coffee. Nimman has the most, ahead of the Old City, and a handful open by 07:00.
Local tip: Pair the bake with a pour-over at a bakery café that also roasts or brews specialty coffee; Akha Ama Phrasingh, Cottontree and Khagee are the easiest to reach.
Where these cafés are: Nimman (16), Old City (11), Santitham (8), Riverside & Wat Ket (6), Suthep & CMU (6), Tha Phae & Night Bazaar (3), South Chiang Mai (1), Chang Phueak & north (1).

Foi thong began as fios de ovos, a Portuguese sweet of egg yolks drawn into thin strands and boiled in sugar syrup, which Portuguese travelers carried to Thailand, Japan and India.1 Its Thai name means "golden strand"; thong, gold, is considered auspicious, and the long threads are said to stand for long life.1
Maria married Constantine Phaulkon, a Greek-born adventurer at the court of King Narai, in 1682. After his execution in 1688 she was held as a palace slave, worked in the royal kitchens and eventually became head of the kitchen staff.2
The bakery-café format is familiar from Thai chains too. Outlets of S&P, one of the local brands that still outsell Starbucks in Thailand, combine a bakery, a café and a restaurant under one roof.3
The first trays come out in Santitham, where Nana Bakery starts trading at 06:00. In south Chiang Mai, สภากาแฟ (เจ้าเก่า) serves bakes and breakfast from 05:30 to 11:00, and both Wake Up Coffee branches, which double as bakeries, are open 24 hours.
Later in the morning, Cafe de Thaan Aoan in the Old City and Yellow Crafts at 257/29 Suthep Road open at 07:00, and Friend Coffee in the Old City at 07:30. Near the night bazaar, Mam's Cake Coffee Breakfast opens daily 07:00–19:00. More than half of the bakery cafés are closed by 18:00.

For cake late, Shewitkhontammada Coffee House in Nimman bakes and stays open until 23:15, and Mango Tango and iberry garden serve until 22:00.
