Chiang Mai sits in Thailand's coffee country. Chiang Rai province grows the most arabica, followed by Chiang Mai and Mae Hong Son, and the crop goes back to 1969, when a royal initiative under King Bhumibol began giving hill-tribe farmers coffee to grow in place of opium.1 Doi Saket (ดอยสะเก็ด), in the east of Chiang Mai province, is one growing region; Doi Chang (ดอยช้าง) and Pangkhon (ปางขอน), both in Chiang Rai, lend their names to cafés in the city.2315
The city drinks a lot of it. In 2022 The Urbanis counted more than 1,000 coffee shops in urban Chiang Mai and over 2,700 across the province, and LINE MAN Wongnai recorded about 1,700 coffee-shop openings in Chiang Mai in 2024, against 400 closures.45

Thai-style coffee usually comes with condensed milk and plenty of sugar.6 Ask for waan noi (หวานน้อย, a little sweet) or mai waan (ไม่หวาน, not sweet); iced coffee is kafae yen (กาแฟเย็น).7 The old-style oliang (โอเลี้ยง) blends robusta grounds with brown sugar and grains such as corn, soybeans and sesame, and is brewed through a cloth filter.8 Tipping is not common in Thailand.6
Cafés here keep early hours: about half open between 07:00 and 08:00, and more than half close by 18:00, so plan an afternoon coffee before you plan dinner. For a coffee after dark, Nimman is the place to look: Yesterday on Nimmanhaemin Road stays open until midnight, and Wide-awake 24 hours and Camellia & Co. never close. February to April is the burning season, when agricultural fires cause severe smog; that's the time for an indoor table.9

Riverside & Wat Ket and Old City have the most cafés, followed by Nimman. Riverside & Wat Ket has the most specialty cafés, ahead of Nimman and the Old City, and Nimman has the most that serve until 21:00 or later.
Early. More than half of Chiang Mai's cafés close by 18:00, and about half open between 07:00 and 08:00. Of those that serve until 21:00 or later, Nimman has twice as many as the Old City. Even Ristr8to, the city's best-known espresso bar, shuts at 20:08.
In the highlands of northern Thailand. Chiang Rai province grows the most arabica, followed by Chiang Mai and Mae Hong Son. Doi Saket, a district in the east of Chiang Mai province, is one growing region, and Doi Chang and Pangkhon are coffee villages in Chiang Rai. Coffee was promoted there from 1969 under a royal initiative to replace opium.
Ask for waan noi (หวานน้อย), meaning a little sweet, or mai waan (ไม่หวาน), meaning not sweet. Thai-style coffee usually comes with condensed milk and plenty of sugar, so it's worth saying when you order. Iced coffee is kafae yen (กาแฟเย็น).
