King Mangrai founded Chiang Rai in 1262 on the flat plain of the Kok River, 34 years before he founded the Lanna kingdom in 1296 with Chiang Mai as its capital.12 The province around the city is Thailand's largest coffee grower, and nearly all of what it grows is arabica.3

The best-known farms are on Doi Chang, about an hour and a half from the city, where Akha, Lisu and Yunnanese Chinese households, more than 1,000 of them, farm at 1,000–1,700 m.34 In the Golden Triangle, near the borders with Myanmar and Laos, the Mae Fah Luang Foundation began the Doi Tung Development Project in 1988 to move farmers from opium to crops such as coffee and macadamia; it has paid its own way since 2002.5

Specialty coffee in town is recent. Roj Pongpijit, whose The Roastery by Roj stands on Sanambin Road, is widely credited with bringing third-wave coffee to Chiang Rai, at a time when the choice was chain coffee shops and sweet Thai coffee.6

How coffee works in Chiang Rai

At the counter, start with ow (เอา, "I'll have"), then the drink and the temperature: ron (ร้อน) is hot and yen (เย็น) iced, so an iced latte is latte yen. Drinks come at the shop's normal sweetness, waan pokati (หวานปกติ), unless you ask for less, and many cafés pour only one cup size.7

A plain espresso is seldom served as a short Italian-style shot, so order a pour-over or an americano if you want coffee without milk.7 For iced tea without milk, ask for chaa dam yen.8 Tipping isn't expected: Thais occasionally leave their change at restaurants, and where a service charge is on the bill, it replaces a tip.8

Cafés keep daytime hours. The Roast on San Khong Luang Road opens at 07:00 and most roasters close at 17:00 or 18:00; for a later coffee, Kane Car Care & Cafe and Sound Brown Coffee both serve until 23:00.

The cool season is the comfortable one, with December highs around 28 °C and lows near 15 °C, while April averages almost 35 °C; the monsoon lasts from late April through October.1 Smoke is the other season. Across northern Thailand, fire activity builds in February, peaks in March and fades by May, and on 27 March 2026 the air quality index in Mueang Chiang Rai reached 313, rated very unhealthy.910

Where is Chiang Rai's coffee grown?

In the province's highlands. Chiang Rai is Thailand's largest coffee-growing province and grows almost only arabica. How do you order coffee in Chiang Rai?

Roughly February to April. Fire activity across northern Thailand peaks in March and fades by May as the rains arrive. On 27 March 2026 the air quality index in Mueang Chiang Rai reached 313, rated very unhealthy, so an air-conditioned café beats a terrace in those weeks.
