Coffee built São Paulo. Brazil has been the world's largest coffee producer for about 150 years, and the trade turned the city from a town of 30,000 people in the 1850s into one of 240,000 by 1900.1 The beans went out through the port of Santos, where the Bolsa Oficial de Café opened on 7 September 1922; the last trading session there was in the 1950s, and the building has housed the Museu do Café since 1998.12 In the capital, coffee barons built mansions along Avenida Paulista, opened in 1891.3

The everyday café is the padaria (bakery). SampaPão, the bakers' union, counted about 5,200 in the city in 2024, and almost every one serves a breakfast of pão na chapa, a French roll split, toasted on the griddle and buttered.45 The usual partner is a pingado. Gazeta de S.Paulo traced the pair to the first Café Girondino on Rua 15 de Novembro, whose breakfast an old memoirist described as a buttered roll, a glass of milk "and a few drops of coffee. Hence the name pingado."6

Specialty coffee came later. Santo Grão was founded in 2003 by Marco Kerkmeester, a New Zealander who left a marketing career at IBM, and roasts in Cotia, in greater São Paulo, with beans from Sul de Minas, Cerrado Mineiro and other Brazilian regions.7 Liberdade, settled by Japanese immigrants from 1912 and later by Chinese, Taiwanese and Korean families, keeps its own cafés around Rua Galvão Bueno, such as Sol Café at number 5.8

How coffee works in São Paulo

A cafezinho is a small cup of black coffee, traditionally strained through a cloth filter with the sugar boiled into the water, so it arrives sweet.9 It is also hospitality: you may be offered one at the hairdresser or the dentist.9 At a padaria counter the same small cup goes by café coado (filter coffee) in a xícara (cup), and a café expresso pequeno is a small espresso.10

Ask for a média in São Paulo and you get coffee with milk, what an Italian bar calls a caffè latte.11 A pingado is filter coffee with hot milk, served in a glass, and a Brazilian cappuccino often comes topped with chocolate, cinnamon or whipped cream, unlike the Italian one.1011 Pão de queijo (cheese bread) is sold by the piece or by the kilo, and the same padarias price combos of coffee with pão na chapa, pão de queijo or a misto quente (ham-and-cheese toastie).10

In late September 2026, Procon-SP, the state consumer agency, priced breakfast at 50 padarias spread over the city's five regions. The regional averages for a small café coado ran from R$5.93 in the East Zone to R$7.71 in the West, and a small espresso from R$7.99 to R$9.33.10 A pão de queijo averaged R$10.32 and a pão na chapa R$7.48 across the city.10

Restaurants add a taxa de serviço (service charge), now often 13% rather than the old 10%, and a few charge 15%.12 Procon-SP says paying it is optional and that it only applies to table service: if you order at the counter or serve yourself, it should not be on the bill. Where it is charged, the percentage has to be stated in advance, on the menu or at the door.12
