The roaster most often tied to Vancouver is 49th Parallel, founded by the brothers Vince and Michael Piccolo in 2004.1 Its cafés sell doughnuts from Lucky's, an in-house bakery brand.2 Revolver opened on the Gastown end of Cambie Street in 2011, choosing three to six beans each week by blind tasting and brewing them five ways,3 and in 2017 Sprudge wrote that many still saw it as the city's benchmark.2

Espresso arrived earlier on the east side. Italian immigrants settled in east Vancouver after the Second World War, and the northern part of Commercial Drive became known as Little Italy.4 Café Calabria, founded there by Francesco Murdocco in 1976, describes itself as the city's oldest Italian coffee house.5

The names change quickly. Matchstick, a Vancouver roaster with several cafés, had closed all of them by May 2026, and new cafés moved into some of its rooms.6 Breka, a family bakery that started in the Sunset neighborhood in 2006, keeps every one of its cafés open 24 hours a day.7 Rain sets the rhythm the rest of the year: the airport averages 166 rainy days, with November the wettest month and July the driest.8

How coffee works in Vancouver

Alongside drip and espresso, the city's own café drink is the London Fog: Earl Grey tea with steamed milk and vanilla, sweetened with honey or syrup.9 The usual story credits Mary Loria, who asked for it at the Buckwheat Café in the mid-1990s when morning sickness put her off coffee; other cafés dispute that account.10

Numbeo's crowd-sourced figure for a regular cappuccino was C$5.60 in October 2026, within a range of C$3.50 to C$7.11 Menus surveyed in early 2026 put a 12-ounce latte at independent cafés between C$6.25 and C$7.50, and drip coffee between C$3.50 and C$5.12 Chains go lower: in June 2026 Waves Coffee House, founded in Vancouver in 2005, cut its drip coffee to under C$3.13

Menu prices leave out tax. British Columbia charges the 5% federal GST on a café order,14 but coffee, tea and other non-alcoholic hot or cold drinks are exempt from the provincial PST; soda is the exception, at 7%.15 Food is exempt from PST as well, so a latte and a pastry cost the menu price plus 5%.15

The card reader at the counter usually suggests a tip. In a Research Co. poll taken in May 2025, 14% of Canadians said they tip at a coffee shop every time, and 65% disapproved of coffee shops prompting for a tip when the customer pays by card.16
