Valencia’s own cold drink is orxata, horchata in Spanish: a sweet milk pressed from xufa (tiger nut). A Denominación de Origen has protected the Valencian crop since 25 September 1995, and it grows in 16 municipalities of the northern huerta (irrigated farmland), the city of Valencia among them.1 Horchata comes with fartons, glazed finger buns for dunking that the Polo family developed in the 1960s.2 Horchatería de Santa Catalina, its rooms lined with Manises ceramics, claims two centuries in the trade.3

The city’s best-known glass is not coffee at all. Agua de Valencia mixes freshly squeezed orange juice with cava, gin and vodka over ice; the painter Constante Gil is credited with inventing it in 1959 at the Café Madrid, on Carrer de l’Abadia de Sant Martí.4 Café de las Horas, open since 1994 on Carrer del Comte d’Almodòvar, pours it by the jug: €14 for half a liter as of 2026.5

Specialty coffee has spread quickly. The map published by Valencia Is Coffee, the city’s specialty festival, listed 90 cafés in 2025, 20% more than a year earlier, and the festival drew about 1,500 people over two days that June.6 Some cafés roast what they pour: Bluebell Coffee Co. in Ruzafa and Tallat in El Cabanyal both roast their own beans.7

How to order coffee in Valencia

Bar coffee follows the Spanish pattern with a few local names. A tallat is the Valencian word for a cortado, an espresso cut with a little milk.7 A café bombón is espresso over condensed milk; on El Cafetín’s 2026 menu in El Carmen it cost €2.50, against €1.70 for a café solo and €2.80 for a café con leche.8 In summer, a café del tiempo is coffee with ice.9

Mid-morning belongs to the esmorzaret, the Valencian almuerzo (late-morning meal), which bars serve from about 09:00. It is a ritual more than a sandwich: peanuts and olives to start, a bocadillo, beer or wine with gaseosa (lemonade), and a cremaet, black coffee flamed with rum, sugar, lemon and cinnamon.10 In 2023 a complete esmorzaret with beer and cremaet could still be found for €5.11

Horchaterías pour orxata líquida, or granizada (half-frozen), with fartons to dip.18 Nearly all of the protected crop goes into the drink.1 Daniel, a family firm making horchata and fartons in Alboraia since 1949, opened a stall in the Mercado de Colón in 2013 and also sells on Calle del Mar.1213 Around Fallas in March, horchaterías and chocolaterías fry buñuelos de calabaza (pumpkin fritters) to dip in thick chocolate.13

Specialty cafés keep shorter hours than bars: most close by 18:00 and shut one day a week.6 The traditional cafés run later. Café de las Horas charges €2.50 for a café solo or cortado and €3 for a café con leche as of 2026, and its house breakfast of coffee and toast costs €5.50.5
