Santiago Centro keeps the grid Pedro de Gamboa laid out after Pedro de Valdivia appointed him in 1541.1 The Metropolitan Cathedral stands on the west side of the Plaza de Armas, and the Central Post Office and the Museo Histórico Nacional face it from the north.1 South of the square, Ahumada was closed to traffic in 1977: work began on 1 February and the pedestrian street opened on 22 November.2
Downtown coffee follows office hours. The cafés con piernas, stand-up bars served by waitresses, change staff at lunchtime and sit mainly between San Pablo, the Alameda, Mac-Iver and San Martín.3 The specialty bars are newer and more scattered, from Barrio Londres to the Paseo Bulnes.
Local tip: For an early weekday coffee downtown, Brunchito on Miraflores and Le Blanc on Catedral open at 07:30; Casacien in Barrio Dieciocho opens at 08:00, Monday to Friday only.

London Coffee
Cafés con piernas on Ahumada
The format is a raised counter, mirrored walls and few or no chairs, since customers are expected to stay only as long as a coffee takes; you pay at a till.3 At their peak an estimated 150 operated in Santiago, and the trade has shrunk since 2005.3 Most of today's waitresses are immigrants, many from Venezuela, Colombia and Peru.3
The abiertos (open ones) have large windows on Ahumada, Estado and Huérfanos and modestly dressed staff; the privados sit in basements or galerías behind polarized glass.3 At Café Haití on Ahumada, regulars still drink standing up, and former footballers, club officials and sports journalists still meet there.4
Café Colonia and Casacien
Café Colonia, at Mac-Iver 161 near the Biblioteca Nacional, is one of the pastry-shop cafés that opened in the 1950s, and Memoria Chilena notes it is still a meeting place for intellectuals.5 In the same decade cafés followed the cinemas and theaters downtown, among them the Astoria on Ahumada.5
In Barrio Dieciocho, near Los Héroes station on Lines 1 and 2, Casacien roasts its own coffee in the Casa Arquitecto Larraín Bravo, a house museum designed more than a century ago by Ricardo Larraín Bravo.6 It opens weekdays 08:00–17:00, and a shot of coffee started at CLP$790 in May 2026.6
Barrio Londres and the Paseo Bulnes
Barrio París-Londres, between the Alameda, San Francisco, Alonso Ovalle and Serrano, was built in the 1920s on land sold off by the Franciscans of the Iglesia de San Francisco, to designs by Ernesto Holzmann, father and son.7 R3 Coffee & Roasters has a terrace at Londres 42, and Almacén Canela y Cilantro is at Londres 34. Londres 38, between the two, was a repression and extermination center in 1973–1975.7
The Paseo Bulnes, the pedestrian avenue that runs six blocks south from the Plaza de la Ciudadanía to Parque Almagro, has the longest run of cafés downtown.8 Bulnes Coffee Shop (76), Carvel One (117), Café de Altura (122), BFresh (145), Tasty Bulnes (182) and StarClick Café (325) line it, with La Moneda and Parque Almagro stations at either end.8
Early starts and weekends
Brunchito, at Miraflores 260, and Cafetería Le Blanc, at Catedral 1281, both open at 07:30. Le Blanc stays open until 21:00 on weekdays and opens 09:30–19:00 on Saturdays; Brunchito keeps its 07:30 start Monday to Saturday and closes at 20:00.
Weekends are quieter, since Casacien is weekday-only and the cafés con piernas run office hours.63 Café Justicia is on the Alameda, and Cafetería Copacabana on Bandera and La Yoyita on Diagonal Paraguay have Wi-Fi.
