Hamburg’s everyday coffee began at work. From the middle of the 19th century, plain canteens for dock and shipyard workers, called Volkskaffeehallen or Kaffeeklappen, passed food and coffee through a hatch (Klappe) and served no alcohol, because employers wanted less schnapps on the quays.1 The association that ran them in Hamburg dates from 1887, still had 18 halls in 1959 and went bankrupt in 1975 under the name Hafen-Rast.1

The galão arrived with the Portuguese, who came from the late 1950s and above all after the 1964 recruitment agreement, first to jobs in the port and Altona’s fish trade. About 9,000 people with Portuguese roots live in Hamburg, more than in any other German city.2 Their pastelarias (pastry cafés) are found in the Portugiesenviertel by the harbor and in Eimsbüttel.3

Specialty coffee followed. Annika Taschinski and Thomas Kliefoth opened Elbgold’s first café on Mühlenkamp, and the company now roasts on Lagerstraße in the Schanze.45 Public Coffee Roasters opened on Wexstraße in April 2014, and Nord Coast on Deichstraße in 2015.67

How coffee works in Hamburg

Say “Moin” when you walk in: one works as a greeting at any hour of the day or night, and “Moin, Moin” already counts as chatter.8 At Caravela on Gertigstraße the menu gives both languages: an espresso is also a bica, the galão, Portugal’s milky coffee, is listed with latte macchiato, and a small galão with a pastel de nata (custard tart) comes as a set.9

Filterkaffee (drip coffee) can come in two sizes: in August 2025 Café Auszeit on Horner Weg charged €2.40 for a Tasse (cup) and €2.80 for a Pott (mug).10 The city’s pastry is the Franzbrötchen, and bakeries vary it: Zimt & Zucker on Brodschrangen lists chocolate and pumpkin versions.11 Hamburg Tourismus puts the Elbgold café on Eppendorfer Baum and the café in the Planetarium on its list of ten good addresses for one.12

Tips are welcome rather than expected at the counter. In a 2025 survey for the till maker Lightspeed, 32% of German respondents said a tip was normal in a café, up from 25% a year earlier, but only 9% at self-service and 18% for orders at the counter; a quarter felt pressured by preset tip buttons on card terminals.13

Plan an afternoon coffee early: most Hamburg cafés close by 18:00 or 19:00, and about three in ten stay shut on Sundays.
