In Japan, supesharutī kōhī (スペシャルティコーヒー, specialty coffee) is a question of what ends up in the cup. The Specialty Coffee Association of Japan defines it by a flavor the drinker finds outstanding, which requires consistent quality control from seed to cup, and it lists sustainability and traceability as conditions too.1 Matsu Coffee, roasting since 1975, uses an older term for itself, jika baisen (自家焙煎, roasted in-house), and so does 香珈珈琲 in Senda-machi.1113
Hiroshima drinks more coffee than its size suggests. Sprudge reported in 2024 that the city's households spend more on coffee than those of any other Japanese city, and that a coffee fair at Mitsukoshi was in its third year.3 Its best-known roaster came back from Tokyo: Obscura Coffee Roasters was founded in Sangenjaya in 2009 by three men from Hiroshima, who later opened a shop in their home city.45
Local tip: For an early cup, Teranishi's Takaramachi main store and Kokutaiji branch both open at 08:00; they close on Sundays and public holidays.10
Where these cafés are: Peace Park & Tōkaichi (3), Senda & Takaramachi (3), Hondōri & Kamiya-chō (3), Hiroshima Station (2), Hakushima & Moto-machi (2), Hatchōbori & Nagarekawa (1), Ujina & Minami-machi (1), Yokogawa (1).

Obscura splits its Hiroshima work between three shops.6 Fukuromachi, at 3-28 Fukuromachi on a side street off Rijō-dōri, is the café, with tables inside and wooden benches out front.56 Hondōri, at Hondōri 3-1, sells beans, brewing gear, handmade ceramics and gifts, and PARK, at Moto-machi 15-1, has the roastery attached and serves coffee beside it.6
The company says it visits farms and cooperatives every year and pays above typical market prices for green coffee.7 Each lot is roasted to suit the bean, pushed toward fruitiness or toward sweetness and body depending on its condition.7
Two Hiroshima roasters were at it long before the specialty label arrived. Teranishi Coffee was founded in 1978, roasts every day on a Probat machine and brews with its own neru (ネル, flannel) filter.10 Its main store is at Takaramachi 6-15 and its branch at Kokutaiji-machi 1-3-15.10
Matsu Coffee (松珈琲) opened in 1975 in Hikari-machi, Higashi-ku, close to the north exit of Hiroshima Station.11 A second-generation owner took over in 2022 and still roasts daily, adjusting for the state of each day's beans; the shop serves coffee at its tables, sells beans and does takeout.11 It has no parking of its own and sends drivers to paid street and coin parking nearby.11
Hakushima R, at Higashi-Hakushima-chō 10-4, roasts on a Giesen machine, a make it notes is approved for the World Coffee Roasting Championship.12 The menu numbers its coffees R/1 to R/4: two Ethiopians at different roast levels, a Colombian Bourbon from Santuario and an Aceh Gegarang from Indonesia. It takes cash and PayPay only.12
Imagine by Takada Coffee is the Hiroshima outpost of Takada Coffee, founded in 1987 as the first independent specialty roaster in Shimonoseki, Yamaguchi Prefecture.9 It fills a renovated former bank on Heiwa-dōri in Kawaramachi, with beans from the company's own roastery.8 South of the center, 香珈珈琲 at Senda-machi 2-10-6 specializes in fukairi (深煎り, dark roast) and changes its profile daily for weather and humidity.13
Hondōri & Kamiya-chō has the most specialty cafés, with Obscura's Fukuromachi and Hondōri shops and Teranishi's Kokutaiji branch, ahead of Hakushima & Moto-machi, Peace Park & Tōkaichi and Senda & Takaramachi. Okuda Roast Cafe is at Hatchōbori 12-21, and Roastery Cafe Note sits farthest south, at Ujina-nishi 4-1-67.
Progress Coffee Roastery & Sweets Factory, in Peace Park & Tōkaichi, does coffee to take away and opens 10:00–18:00 every day except Tuesday.
The state retail price survey for September 2026 recorded ¥530 for a cup of coffee at a kissaten (喫茶店, traditional coffee house) in Hiroshima city. That is ¥16 above the mean of the 79 surveyed cities (¥514) and ¥110 below Tokyo's 23 wards (¥640).2
Specialty bars charge more than that line. As of 2016, a drip coffee or espresso drink at Obscura's Fukuromachi café cost about ¥550, with refills discounted, and a takeout drip was ¥270.5
