Bread reached Taiwan's rice-eating table in the 1950s, when American aid shipped in wheat flour on a large scale, and Taiwan Panorama describes the baking industry's roots as American and its flavors as Japanese.1 Japanese bakers brought soft sweet breads such as azuki bread and pineapple bread (菠蘿麵包), named for the grid on its crust rather than any fruit; Taiwanese bakers added scallion, pork floss and apple versions.1
European loaves came later. Donq and Yamazaki opened in department stores about 30 years ago with a few baguettes, and competition wins did the rest: Taiwan's team was runner-up at the 2008 Coupe du Monde de la Boulangerie, Wu Pao-chun won the bread category of the first Masters de la Boulangerie in 2010, and a Taiwanese team won the Coupe du Monde in 2022.1
Local tip: Before buying a box of pineapple cakes, check whether the filling is pure pineapple (純鳳梨) or mixed with winter melon (冬瓜); the melon version is the one buyers tend to rate lower.3

Champion loaves and Taiwanese buns
Competition breads brought local produce into European dough. Wu's red wine longan and lychee rose loaves, made with charcoal-roasted longan, wine and black-leaf lychee, shaped what many Taiwanese picture as European bread.1 The traditions now mix both ways: some bakeries making Taiwanese-style buns have moved from fermentation of half a day or less to slow, cold overnight proofs taken from French practice.1
The bakery café as a chain format also started nearby. 85°C Bakery Cafe opened its first shop in July 2004 in what is now New Taipei, named for the temperature its founder thought best for serving coffee, and sells cakes and bread next to its sea salt coffee.2
Pineapple cakes and festival pastry
鳳梨酥 (pineapple cake), pineapple jam in a thin pastry of butter, egg yolk and sugar, is one of Taiwan's top-selling souvenirs and a common gift.3 From 2005 the Taipei City Government ran an annual Pineapple Cake Cultural Festival for several years to promote tourism and sales.3 Some bakers mix winter melon into the filling, which buyers now often read as a sign of lower quality.3
Western-style bakeries have taken over other festival pastry too: at the Mid-Autumn Festival in 2024, the long lines for egg-yolk pastries formed at Western-style bakeries rather than traditional Chinese pastry shops, Taiwan Panorama reported.1

Bakery cafés in Taipei: questions
What breads do bakery cafés in Taipei serve?
Soft Taiwanese breads with Japanese roots, such as azuki bread and pineapple bread, named for its grid-patterned crust, sit beside local scallion, pork floss and apple buns. European loaves arrived later, and competition breads like Wu Pao-chun's red wine longan and lychee rose loaves helped make them popular in Taiwan.
Which Taiwanese bakers have won world titles that shaped Taipei bakery cafés?
Taiwan's team was runner-up at the 2008 Coupe du Monde de la Boulangerie, Wu Pao-chun won the bread category of the first Masters de la Boulangerie in 2010, and a Taiwanese team won the Coupe du Monde in 2022. Those wins popularized European-style bread, which Donq and Yamazaki had brought to department stores about 30 years ago.
What should you know before buying pineapple cakes at a Taipei bakery?
Pineapple cake (鳳梨酥) is pineapple jam in a thin pastry of butter, egg yolk and sugar, and one of Taiwan's top-selling souvenirs. Some bakers mix winter melon into the filling, which buyers now often read as a sign of lower quality, so check the label for pure pineapple. From 2005 Taipei ran an annual Pineapple Cake Cultural Festival for several years.
