Chicago’s bakery traditions follow its immigrant neighborhoods. The first Polish settlement centered on the Polish Triangle, where Milwaukee and Ashland Avenues meet Division Street, an area later called Polish Downtown.1 In Pilsen, Panadería Nuevo León at 1634 W. 18th Street has been open since Abel Sauceda founded it in 1973, and a two-week pause in 2020 was its first closure.2

Uptown and Andersonville have the most bakery cafés, many of them along Broadway, ahead of Lakeview and Lincoln Square. Most bake for the morning trade and close between 15:00 and 18:00; doughnut shops and the bigger West Loop counters are the exceptions.

Local tip: Doughnut Vault on Franklin Street closes at 13:00 or when the doughnuts are gone, so go in the morning; on Pączki Day, Chicago’s Polish bakeries draw lines before dawn.95
