Raffles Place was Commercial Square until 8 March 1858, and reclamation from 1858 to 1864 formed Collyer Quay between Johnston's Pier and Telok Ayer Market.7 The bay to the east came later: reclamation finished in 1992 with about 360 hectares of waterfront, and the Marina Barrage turned the basin into a freshwater reservoir in 2008.8

Coffee here keeps office hours. Double Shot Coffee Shenton and Mellower Expresso both run Monday to Friday only and close by 17:00, so weekend coffee takes a walk. The exceptions are the bars and restaurants along the quays and the cafés around the bay's attractions.

Local tip: Weekend coffee in the CBD takes planning: Sojourner Coffee on Robinson Road is open only until 13:30 on Saturdays, so head for Fangko Coffee & Beer on Hong Kong Street, which opens at 07:00 at weekends too.

North Canal Road and Hong Kong Street are a short walk away. Fangko Coffee & Beer opens at 07:00 every day, and Punch follows at 08:00.

Collyer Quay and the bay

Caffe Fernet is less a coffee stop than an Italian restaurant from the Jigger & Pony Group, at Customs House on Collyer Quay, with weekday lunches, early-evening aperitivo and a Negroni list.6 Exit J of Raffles Place station is the closest way in.6 It stays open until 02:00 on Fridays and Saturdays.

Across the water, cafés follow the sights: SweetSpot in the ArtScience Museum lobby, Ralph's at The Shoppes at Marina Bay Sands and Cafe Aster inside Gardens by the Bay, a 101-hectare site split into three gardens.8 Three Hands Coffee is on the ground floor of The Sail.
